Pineapple horchata

Five simple ingredients, one delicious drink. A Costa Rican-inspired twist on the classic rice beverage, this satisfying summer treat makes use of every juicy part of the pineapple — right down to the core.
 

Ingredients

  • 1 pineapple
  • 5 cups water
  • 1 cup long-grain white rice
  • 1 cinnamon stick
  • Sugar, to taste

 

Preparation

  1. Peel and core the pineapple. (Reserve the flesh for garnish and snacking.)
  2. Place rice, cinnamon stick, pineapple peels and core in a pot with the water. Bring to a boil, then lower the heat and simmer for 25 minutes.
  3. Remove the cinnamon stick, peel and pineapple core.
  4. Blend in a blender or with an immersion blender. Strain if you want a smoother texture.
  5. Add sugar and water, if needed, for taste and consistency.
  6. Garnish with sliced pineapple pieces.
     

Yield: 4 glasses
