Raspberry soft-serve smoothie

Cool down with the vibrant berry flavor of this naturally sweet and frosty treat from Blue Zones*.  Packed with heart-healthy ingredients like dates, cashews and the zing of fresh raspberries, it’s a dairy-free delight perfectly suited to summer picnics and pool parties. Grab your blender and get ready to chill out!

Ingredients

  • 3 bananas
  • 1 ½ cups frozen raspberries
  • ½ cup fresh raspberries
  • 2 dates, pitted
  • ¼ cup cashews
  • 1 cup unsweetened plant-based milk
  • ½ tsp lemon juice (optional)
     

Preparation

  1. The night before, peel the banana and place it in the freezer.
  2. The morning of, blend the frozen raspberries, bananas, dates, cashews, lemon juice (if using) and non-dairy milk in a blender until smooth. Add extra plant milk or water if you prefer a softer smoothie.
  3. Lightly rinse the fresh raspberries.
  4. Pour the smoothie into a cup. Stir in the fresh raspberries and enjoy!

Yield: Two servings
