Pumpkin pancakes

This cozy Blue Zones* recipe brings all the comfort of your favorite fall latte — with natural sweetness from a touch of honey. More than just a seasonal flavor, pumpkin is full of antioxidants and nutrients that can help you feel your best all year long.

Ingredients

  • 1 cup oat flour  
  • ¼ cup vanilla soy or almond milk
  • ½ cup pumpkin puree
  • ¼ cup applesauce
  • 1 teaspoon cinnamon
  • ½ tablespoon baking powder
  • 1 tablespoon apple cider vinegar
  • 1 ½ tablespoons honey
     

Preparation

  1. In a large bowl, mix all dry ingredients together.
  2. Add the wet ingredients and mix until combined.
  3. Let batter sit for three to four minutes to thicken.
  4. Heat a nonstick pan over medium heat. Once the pan is hot, reduce the heat to medium-low.
  5. Oil the pan lightly and gently pour about 1/3 cup of batter into the center of the pan.
  6. Cook for one to two minutes, then flip and cook the other side.
  7. Repeat until batter is used up.
